What makes some processed foods so unnaturally bright? The answer lies in lake pigments—color additives made by binding dyes to aluminum-based compounds.

Enter lake pigments—a fusion of water-soluble dyes and insoluble compounds like aluminum hydroxide. This combo locks in color, making it resistant to moisture and perfect for candies, baked goods, and even cosmetics.

I do not recommend consuming artificial food additives, but avoiding them can be challenging, as synthetic colorants are even added to produce.

To ensure your food is free from these additional chemicals, carefully read ingredient labels and look for the word ‘lake’ following a color name (e.g., ‘Blue 1 Lake’).
